Perm\u00edtanos detenerle aqu\u00ed mismo.<\/p>\n\n\n\n<p>Claro que estas \"delicias\" existen, pero Islandia ofrece mucho m\u00e1s. Se trata de ingredientes frescos de granja, deliciosos productos l\u00e1cteos y marisco para morirse. El patrimonio alimentario local hace de la optimizaci\u00f3n de recursos una virtud mediante innovadoras t\u00e9cnicas de conservaci\u00f3n, ya sea salaz\u00f3n, encurtido, ahumado o incluso enterrado bajo tierra. Por encima de todo, los alimentos tradicionales son ricos, diversos, imaginativos y testimonio de la capacidad innata del ser humano para adaptarse, sobrevivir y prosperar.<\/p>\n\n\n\n<p>En los tiempos modernos, una menci\u00f3n especial merece el movimiento Slow Food, que da prioridad a los alimentos de cosecha propia frente a los importados y recupera viejas recetas para todo un mundo nuevo.<\/p>\n\n\n\n<p>\u00a1Investiga!<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Secretos del mar<\/h4>\n\n\n\n<p>Dado que Islandia es sin\u00f3nimo de mar, es obvio empezar por los platos de pescado del men\u00fa. Para empezar est\u00e1 el har\u00f0fiskur, tambi\u00e9n conocido como pescado seco, una delicia muy apreciada (y f\u00e1cil de encontrar) que se come mejor como tentempi\u00e9 r\u00e1pido, untado con la deliciosa mantequilla islandesa. Suele elaborarse con eglefino o bacalao limpio, secado al aire y cortado en tiras. Otra opci\u00f3n popular es el wolffish.<\/p>\n\n\n\n<p>El bacalao (\u00feorskur en island\u00e9s) es un manjar. En el pasado, las mejillas y las lenguas eran los trozos favoritos (porque el resto se exportaba), pero hoy en d\u00eda los filetes de bacalao tambi\u00e9n lo son.<\/p>\n\n\n\n<p>Otros pescados populares del men\u00fa son: l\u00fa\u00f0a (flet\u00e1n), steinb\u00edtur (pez lobo), sandhverfa (rodaballo), s\u00edld (arenque), skarkoli (solla) y skata (raya). En verano se puede degustar silungur (trucha de agua dulce) y villtur lax (salm\u00f3n salvaje) o Eldislax, tambi\u00e9n conocido como salm\u00f3n de piscifactor\u00eda.<\/p>\n\n\n\n<p>Tambi\u00e9n se ofrece r\u00e6kja (gamba), h\u00f6rpudiskur (vieira) y kr\u00e6klingur (mejill\u00f3n azul). Y ya que est\u00e1, no deje de probar la langosta noruega, o scampi (humar). H\u00f6fn, en el sureste de Islandia, es especialmente conocida por el humar, e incluso celebra un festival anual de la langosta.<\/p>\n\n\n\n<p>El plokkfiskur es un plato tradicional \"seguro\" para los visitantes. Filetes de bacalao o eglefino fresco hervidos, a veces tambi\u00e9n con algo de pescado ahumado, y machacados con patata, cebolla y salsa blanca cremosa, servidos con pan de centeno. La comida tradicional m\u00e1s sabrosa. No olvide sazonar con abundante pimienta blanca.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Lo mejor del carnicero<\/h4>\n\n\n\n<p>La variedad de carnes de cuatro patas incluye cordero tierno y jugoso de animales criados con vegetaci\u00f3n libre de productos qu\u00edmicos mientras vagan por las colinas sin supervisi\u00f3n durante todo el verano. Puede elegir entre cordero frito, cordero ahumado (hangikj\u00f6t) o filetes de cordero. No deje de probar la tradicional sopa de cordero, kj\u00f6ts\u00fapa. Tambi\u00e9n hay ternera y cerdo. Tambi\u00e9n hay filetes de potro (carne de caballo) y filetes de reno de las bestias salvajes que deambulan por las tierras altas orientales, disponibles en diversos men\u00fas. La caza del reno est\u00e1 muy regulada y vigilada.<\/p>\n\n\n\n<p>La variedad de carnes aladas incluye una diversidad de aves dif\u00edcil de superar. El lundi, o frailecillo, ha sido tradicionalmente abundante y se serv\u00eda ahumado o a la parrilla, pero (\u00a1aviso de ley!) sufre una crisis de poblaci\u00f3n debido al cambio clim\u00e1tico y hoy se caza mucho menos.<\/p>\n\n\n\n<p>Es interesante probar nombres estacionalmente ex\u00f3ticos como hei\u00f0ag\u00e6s (ganso de patas rosas) en oto\u00f1o, y rj\u00fapa (perdiz n\u00f3rdica), un manjar navide\u00f1o. Esta \u00faltima es una de las favoritas porque es relativamente f\u00e1cil de cazar y no emigra en invierno. Hoy en d\u00eda su caza tambi\u00e9n est\u00e1 estrictamente regulada. Los svartfugl (no son mirlos propiamente dichos, a pesar de la traducci\u00f3n) son en realidad araos, y tambi\u00e9n se pueden probar.<\/p>\n\n\n\n<p>A pesar de todas las opciones, el pollo sigue siendo el m\u00e1s popular. El pavo sigue siendo un descubrimiento relativamente nuevo en Islandia, pero ha ganado popularidad en los \u00faltimos a\u00f1os.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Dulces cosas<\/h4>\n\n\n\n<p>En cuanto a dulces, Islandia tiene todo lo que necesita. La reposter\u00eda, choux o con levadura, es insuperable y va acompa\u00f1ada de un sinf\u00edn de innovaciones creativas con diferentes coberturas y rellenos.<br>Luego est\u00e1 la kleina, un distintivo bu\u00f1uelo retorcido aromatizado con cardamomo o vainilla y que suele comerse con caf\u00e9.<\/p>\n\n\n\n<p>Si se encuentra en Islandia el lunes siete semanas antes de Pascua (v\u00edspera del Martes de Carnaval y comienzo de la Cuaresma), no deje de participar en el Bolludagur, o D\u00eda del Hojaldre de Nata. Es exactamente lo que parece, y ese d\u00eda las pasteler\u00edas est\u00e1n llenas de deliciosas opciones ricas en mermelada, nata y chocolate. No se pierda el rj\u00f3mabollur, el bollo de nata tradicional, disponible todo el a\u00f1o.<\/p>\n\n\n\n<p>El pan de centeno island\u00e9s es un pan oscuro y claramente dulce, \u00a1pero definitivamente no es un pastel! Se suele servir con salm\u00f3n, trucha alpina, cordero ahumado o plokkfiskur, un guiso cremoso de pescado. Tambi\u00e9n es agradable comerlo solo con mantequilla. Los panes se cuecen al vapor durante muchas horas, a veces en respiraderos geot\u00e9rmicos naturales.<\/p>\n\n\n\n<p>El Skyr es el plato estrella de la cocina islandesa y se ha convertido en un \u00e9xito internacional en los \u00faltimos a\u00f1os. En Islandia se disfruta desde hace much\u00edsimos siglos. Aunque haya probado imitaciones extranjeras, pruebe tambi\u00e9n el aut\u00e9ntico skyr island\u00e9s. Creemos que le impresionar\u00e1. T\u00e9cnicamente, el skyr es m\u00e1s un queso que un yogur. Se elabora con leche desnatada pasteurizada y un cultivo bacteriano island\u00e9s centenario. Tradicionalmente se sirve con leche o nata y az\u00facar, a menudo en el desayuno, y es un alimento b\u00e1sico con el que han crecido casi todos los ni\u00f1os islandeses. Hoy se presenta en todo tipo de sabores que se pueden comer directamente de la tarrina.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Luego est\u00e1n las \"cosas que dan miedo\"...<\/h4>\n\n\n\n<p>El tibur\u00f3n de Groenlandia es famoso por ser venenoso si se come sin preparaci\u00f3n. Un gran comienzo para un \"manjar\", \u00bfverdad? Se prepara mediante un largo y prolongado proceso de fermentaci\u00f3n de 6 a 12 semanas para que no sea t\u00f3xico, seguido de un proceso de secado de cuatro a cinco meses, y el producto final es fuerte y picante, por decirlo suavemente. A algunos les encanta. A la mayor\u00eda, no.<\/p>\n\n\n\n<p>Servido en peque\u00f1os cubos como tentempi\u00e9, es tambi\u00e9n una parte importante de la tradici\u00f3n llamada \u00deorrabl\u00f3t, una fiesta de mediados de invierno con comida tradicional. El hakarl se ofrece en muchos bares y cafeter\u00edas de Reikiavik y de todo el pa\u00eds.<\/p>\n\n\n\n<p>Tambi\u00e9n populares en las fiestas de invierno de \u00deorrabl\u00f3t: los hr\u00fatspungar son test\u00edculos de carnero (aviso legal). Resultado directo de la pobreza del pa\u00eds en el pasado y de la necesidad de aprovechar todo lo que se pudiera comer. Para conservarlos durante el invierno, los test\u00edculos se comprimen en panes y se cuecen en suero. Hoy, sin embargo, se puede elegir entre agrios o frescos. Qu\u00e9 suerte.<\/p>\n\n\n\n<p>La cabeza de oveja, o svi\u00f0, lleva otra advertencia legal. Se trata b\u00e1sicamente de una cabeza de oveja cortada por la mitad a lo largo, chamuscada para quitarle la lana, hervida sin sesos y servida junto con pur\u00e9 de patata y nabo, las verduras m\u00e1s abundantes. Es otra creaci\u00f3n de tiempos dif\u00edciles, cuando no se desperdiciaba ninguna parte del animal. Adem\u00e1s, est\u00e1 bastante bueno si se cierran los ojos.
