Il s'agit d'ingr\u00e9dients frais de la ferme, de produits laitiers d\u00e9licieux et de fruits de mer \u00e0 tomber par terre. Le patrimoine alimentaire local s'efforce d'optimiser les ressources en utilisant des techniques de conservation innovantes, qu'il s'agisse de salage, de saumurage, de fumage ou m\u00eame d'enfouissement sous terre. Par-dessus tout, les aliments traditionnels sont riches, diversifi\u00e9s, imaginatifs et t\u00e9moignent de la capacit\u00e9 inn\u00e9e des \u00eatres humains \u00e0 s'adapter, \u00e0 survivre et \u00e0 prosp\u00e9rer.<\/p>\n\n\n\n<p>Aujourd'hui, une mention sp\u00e9ciale revient au mouvement Slow Food, qui donne la priorit\u00e9 aux aliments produits \u00e0 la maison plut\u00f4t qu'aux importations et qui fait revivre d'anciennes recettes pour un monde enti\u00e8rement nouveau.<\/p>\n\n\n\n<p>Creusez !<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Les secrets de la mer<\/h4>\n\n\n\n<p>L'Islande \u00e9tant synonyme de mer, il est \u00e9vident qu'il faut commencer par les plats de poisson sur la carte. Pour commencer, il y a le har\u00f0fiskur, ou poisson s\u00e9ch\u00e9, un d\u00e9lice tr\u00e8s appr\u00e9ci\u00e9 (et facile \u00e0 trouver) qui se d\u00e9guste comme un en-cas rapide, enduit d'un d\u00e9licieux beurre islandais. Autrefois, les joues et les langues \u00e9taient les morceaux pr\u00e9f\u00e9r\u00e9s (car le reste \u00e9tait export\u00e9), mais aujourd'hui, les filets de morue sont \u00e9galement appr\u00e9ci\u00e9s.<\/p>\n\n\n\n<p>D'autres poissons populaires figurent au menu : l\u00fa\u00f0a (fl\u00e9tan), steinb\u00edtur (loup de mer), sandhverfa (turbot), s\u00edld (hareng), skarkoli (plie) et skata (raie). En \u00e9t\u00e9, vous pourrez go\u00fbter au silungur (truite d'eau douce) et au villtur lax (saumon sauvage) ou \u00e0 l'Eldislax (saumon d'\u00e9levage).<\/p>\n\n\n\n<p>R\u00e6kja (crevettes), h\u00f6rpudiskur (coquilles Saint-Jacques) et kr\u00e6klingur (moules bleues) sont \u00e9galement propos\u00e9s. Et tant que vous y \u00eates, ne manquez pas de go\u00fbter au homard norv\u00e9gien, ou scampi (humar). H\u00f6fn, dans le sud-est de l'Islande, est particuli\u00e8rement r\u00e9put\u00e9 pour son humar et organise m\u00eame un festival annuel du homard.<\/p>\n\n\n\n<p>Le plokkfiskur est un plat traditionnel \"s\u00fbr\" que les visiteurs peuvent go\u00fbter. Il s'agit de filets de morue ou d'aiglefin frais bouillis, parfois accompagn\u00e9s de poisson fum\u00e9, r\u00e9duits en pur\u00e9e avec des pommes de terre, des oignons et une sauce blanche cr\u00e9meuse, le tout servi avec du pain de seigle. Un plat traditionnel r\u00e9confortant et d\u00e9licieux. N'oubliez pas d'assaisonner avec beaucoup de poivre blanc !<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Le meilleur du boucher<\/h4>\n\n\n\n<p>Les viandes \u00e0 quatre pattes comprennent de l'agneau tendre et juteux provenant d'animaux \u00e9lev\u00e9s dans une v\u00e9g\u00e9tation exempte de produits chimiques et qui se prom\u00e8nent dans les collines sans surveillance tout au long de l'\u00e9t\u00e9. Vous avez le choix entre l'agneau po\u00eal\u00e9, l'agneau fum\u00e9 (hangikj\u00f6t) ou les filets d'agneau. Ne manquez pas non plus la soupe d'agneau traditionnelle, la kj\u00f6ts\u00fapa. Le b\u0153uf et le porc sont \u00e9galement disponibles. Des filets de poulain (viande de cheval) et des steaks de renne, ces b\u00eates sauvages qui parcourent les hauts plateaux de l'est, sont \u00e9galement propos\u00e9s dans des menus vari\u00e9s. La chasse au renne est fortement r\u00e9glement\u00e9e et surveill\u00e9e.<\/p>\n\n\n\n<p>La vari\u00e9t\u00e9 des viandes ail\u00e9es comprend une diversit\u00e9 d'oiseaux difficile \u00e0 battre. Le lundi, ou macareux, est traditionnellement abondant et servi fum\u00e9 ou grill\u00e9, mais (avertissement l\u00e9gal !) il souffre d'une crise d\u00e9mographique due au changement climatique et est beaucoup moins chass\u00e9 aujourd'hui.<\/p>\n\n\n\n<p>Les noms exotiques saisonniers comme hei\u00f0ag\u00e6s (oie \u00e0 pattes roses) en automne, et rj\u00fapa (lagop\u00e8de), un mets de No\u00ebl, sont int\u00e9ressants \u00e0 essayer. Ce dernier est un favori car il est relativement facile \u00e0 chasser et ne migre pas en hiver. Sa chasse est aujourd'hui strictement r\u00e9glement\u00e9e. Les Svartfugl (qui ne sont pas de vrais merles, malgr\u00e9 la traduction) sont en fait des guillemots, que vous pouvez \u00e9galement essayer.<\/p>\n\n\n\n<p>Malgr\u00e9 toutes les options, le poulet reste le plus populaire. La dinde est une d\u00e9couverte relativement r\u00e9cente en Islande, mais elle a gagn\u00e9 en popularit\u00e9 ces derni\u00e8res ann\u00e9es.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Des trucs sympas<\/h4>\n\n\n\n<p>Pour les douceurs sucr\u00e9es, l'Islande a tout ce qu'il faut. Les p\u00e2tisseries, qu'elles soient \u00e0 base de choux ou de levain, sont incomparables et s'accompagnent d'innombrables innovations cr\u00e9atives avec diff\u00e9rentes garnitures et fourrages.<br>Vient ensuite le kleina, un beignet torsad\u00e9 tr\u00e8s particulier, aromatis\u00e9 \u00e0 la cardamome ou \u00e0 la vanille, que l'on d\u00e9guste g\u00e9n\u00e9ralement avec du caf\u00e9.<\/p>\n\n\n\n<p>Si vous \u00eates en Islande le lundi sept semaines avant P\u00e2ques (la veille du mardi gras et du d\u00e9but du car\u00eame), ne manquez pas de participer au Bolludagur, ou journ\u00e9e des g\u00e2teaux \u00e0 la cr\u00e8me. C'est exactement ce que l'on croit et les boulangeries ce jour-l\u00e0 sont pleines de d\u00e9licieuses options riches en confiture, en cr\u00e8me et en chocolat. Ne manquez pas le rj\u00f3mabollur, la brioche \u00e0 la cr\u00e8me traditionnelle, disponible toute l'ann\u00e9e.<\/p>\n\n\n\n<p>Le pain de seigle islandais est un pain sombre et nettement sucr\u00e9, mais certainement pas un g\u00e2teau ! Il est g\u00e9n\u00e9ralement servi avec du saumon, de l'omble chevalier, de l'agneau fum\u00e9 ou du rago\u00fbt de poisson cr\u00e9meux plokkfiskur. Il est \u00e9galement agr\u00e9able \u00e0 d\u00e9guster seul avec du beurre. Les pains sont cuits \u00e0 la vapeur pendant de nombreuses heures, parfois dans des chemin\u00e9es g\u00e9othermiques naturelles.<\/p>\n\n\n\n<p>Le Skyr est la coqueluche de la cuisine islandaise et a connu un succ\u00e8s international ces derni\u00e8res ann\u00e9es. Chez nous, il est appr\u00e9ci\u00e9 depuis de tr\u00e8s nombreux si\u00e8cles. M\u00eame si vous avez d\u00e9j\u00e0 go\u00fbt\u00e9 des imitations \u00e9trang\u00e8res, essayez aussi le v\u00e9ritable skyr islandais. Nous pensons que vous serez impressionn\u00e9. Techniquement, le skyr est plus un fromage qu'un yaourt. Il est fabriqu\u00e9 \u00e0 partir de lait \u00e9cr\u00e9m\u00e9 pasteuris\u00e9 et d'une culture bact\u00e9rienne islandaise vieille de plusieurs si\u00e8cles. Traditionnellement servi avec du lait ou de la cr\u00e8me et du sucre, souvent au petit-d\u00e9jeuner, c'est un aliment de base avec lequel presque tous les enfants islandais ont grandi. Aujourd'hui, il se d\u00e9cline en toutes sortes de saveurs qui peuvent \u00eatre consomm\u00e9es directement dans le pot.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Et puis il y a les \"trucs qui font peur\"...<\/h4>\n\n\n\n<p>Le requin du Groenland est r\u00e9put\u00e9 pour \u00eatre toxique s'il est consomm\u00e9 sans pr\u00e9paration. Un bon d\u00e9but pour une \"d\u00e9licatesse\", n'est-ce pas ? Le requin du Groenland est pr\u00e9par\u00e9 au cours d'un long processus de fermentation de 6 \u00e0 12 semaines pour le rendre non toxique, suivi d'un processus de s\u00e9chage de quatre \u00e0 cinq mois, et le produit final est fort et piquant, pour ne pas dire plus. Certains l'adorent. La plupart n'aiment pas.<\/p>\n\n\n\n<p>Servi en petits cubes comme en-cas, il constitue \u00e9galement un \u00e9l\u00e9ment important de la tradition appel\u00e9e \u00deorrabl\u00f3t, un festin de mi-hiver avec des plats traditionnels. Le h\u00e1karl est propos\u00e9 dans de nombreux bars et caf\u00e9s \u00e0 Reykjav\u00edk et dans tout le pays.<\/p>\n\n\n\n<p>\u00c9galement populaire lors des f\u00eates hivernales de \u00deorrabl\u00f3t : les hr\u00fatspungar sont des testicules de b\u00e9lier (avertissement l\u00e9gal). R\u00e9sultat direct de la pauvret\u00e9 du pays dans le pass\u00e9 et de la n\u00e9cessit\u00e9 de tirer le meilleur parti de tout ce qui pouvait \u00eatre mang\u00e9. Pour les conserver pendant l'hiver, les testicules sont compress\u00e9s en pains et s\u00e9ch\u00e9s dans du petit-lait. Aujourd'hui, vous avez le choix entre des testicules frais et des testicules s\u00e9ch\u00e9s. Vous avez de la chance.<\/p>\n\n\n\n<p>La t\u00eate de mouton, ou svi\u00f0, est assortie d'un autre avertissement l\u00e9gal ! Il s'agit en fait d'une t\u00eate de mouton coup\u00e9e en deux dans le sens de la longueur, br\u00fbl\u00e9e pour en retirer la laine, bouillie sans la cervelle et servie avec de la pur\u00e9e de pommes de terre et de navets, les l\u00e9gumes les plus abondants. C'est une autre cr\u00e9ation des temps difficiles o\u00f9 aucune partie de l'animal n'\u00e9tait gaspill\u00e9e. En outre, si vous fermez les yeux, c'est plut\u00f4t bon.
